1 pound fresh spinach, washed, stemmed, dried1 cup thinly shredded red cabbage1 cup sliced button mushrooms1/4 cup red onion, thinly sliced1/4 cup canola oil1/4 cup apple juice2 tablespoons Apple Cider Vinegar1 tablespoon maple syrup2 tablespoons Dijon-style mustardpinch of saltblack pepper to taste

| Instructions: |
| Place salad ingredients in a serving bowl.
In a small jar, combine all of the dressing ingredients and shake well.
Pour over salad and toss.
Serve immediately. |
