New Potato Bake

Diet Type: Vegan

Cooking Time: 30 minutes - one hour

Ingredients:

  2 pounds small new potatoes, halved
  2 teaspoons olive oil
  1/2 teaspoon onion powder
  1/4 teaspoon salt
  6 large cloves garlic, unpeeled
 
Directions:

Place the potatoes on a cookie sheet and drizzle with 1 - 2 teaspoons oil. Sprinkle on the remaining ingredients and use your hands to toss it all together until all potatoes are lightly coated with oil. Spread out in a single layer and bake in a 350 oven for 25 - 35 minutes. The garlic can be squeezed out of its skin and used as a spread for the potatoes.
